Grilled Chicken & Avocado Salad Bowl 🥑🥗🔥

A fresh, vibrant salad packed with juicy grilled chicken, creamy avocado, crisp veggies, and a flavorful homemade dressing—perfect for a nutritious and satisfying meal!


Ingredients


For the Grilled Chicken:

1 boneless, skinless chicken breast

1 tbsp olive oil

1 tsp smoked paprika

½ tsp garlic powder

½ tsp salt

½ tsp black pepper

½ tsp oregano

½ tbsp lemon juice


For the Salad:

4 cups romaine or mixed greens (chopped)

½ avocado (sliced)

½ cup cherry tomatoes (halved)

½ cup cucumber (sliced)

½ cup corn (cooked)

For the Creamy Avocado Dressing:

½ avocado

¼ cup Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 clove garlic (minced)

½ tsp salt

½ tsp black pepper

2 tbsp water (to thin, if needed)


Directions


1️⃣ Grill the Chicken:

In a bowl, mix olive oil, smoked paprika, garlic powder, salt, black pepper, oregano, and lemon juice.


Coat chicken in the seasoning and let marinate for 10 minutes.


Heat a grill pan or outdoor grill over medium-high heat.


Cook chicken for 5-6 minutes per side until fully cooked (internal temp: 165°F/75°C).

Let rest, then slice.


2️⃣ Make the Avocado Dressing:

Blend avocado, Greek yogurt, olive oil, lemon juice, garlic, salt, and black pepper until smooth.


Add water 1 tbsp at a time until desired consistency is reached.


3️⃣ Assemble the Salad:

In a large bowl, arrange romaine or mixed greens.


Top with grilled chicken slices, avocado, cherry tomatoes, cucumber, and corn.


4️⃣ Drizzle & Serve:

Drizzle the creamy avocado dressing over the salad.


Sprinkle with extra black pepper and enjoy!
