Ultimate Greek Chicken Gyros with Tzatziki Sauce

Ingredients:
For the Chicken:
Chicken breasts - 2 large (sliced into strips)
Lemon juice - 3 tbsp
Olive oil - 3 tbsp
Garlic - 2 cloves (minced)
Dried oregano - 1 tsp
Paprika - 1/2 tsp
Salt & pepper - to taste
For the Tzatziki Sauce:
Cucumber - 1/2 (grated)
Greek yogurt - 1 cup
Garlic - 1 clove (minced)
Fresh dill - 2 tbsp (chopped)
Lemon juice - 2 tbsp
Salt - to taste
For the Assembly:
Pita bread or flatbreads - 4
Cherry tomatoes - 1 cup (halved)
Cucumber - 1/2 (sliced)
Red onion - 1 small (thinly sliced)
Fresh parsley - 2 tbsp (chopped, for garnish)
Directions:
Marinate the Chicken:
In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add the chicken strips and marinate for 15 minutes.
Cook the Chicken:
Heat a grill pan or skillet over medium-high heat. Cook the chicken strips for 3-4 minutes per side until golden and cooked through.
Prepare the Tzatziki Sauce:
Squeeze the grated cucumber to remove excess water. Mix it with Greek yogurt, garlic, dill, lemon juice, and salt in a bowl.
Assemble the Gyros:
Warm the pita bread in a skillet. Layer the cooked chicken, cherry tomatoes, cucumber slices, and red onion on the bread. Drizzle with tzatziki sauce and garnish with fresh parsley.
Serve & Enjoy:
Fold the pita and serve immediately. Pair with extra tzatziki on the side!
