Spicy Chicken Ramen Bowl with Creamy Sauce

Ingredients:

For the Chicken:

2 boneless chicken thighs or breasts

2 tbsp soy sauce

1 tbsp honey

1 tbsp chili paste (e.g., gochujang or sambal oelek)

1 tsp garlic powder

1 tsp smoked paprika

1 tbsp olive oil

For the Creamy Sauce:

1/2 cup mayonnaise

2 tbsp chili paste (adjust to taste)

1 tbsp soy sauce

1 garlic clove, minced

1/2 tsp lemon juice

Water (to adjust consistency)

For the Noodles:

2 packs instant ramen noodles (discard seasoning packets)

1 tbsp sesame oil

1 tsp soy sauce

1/2 tsp garlic powder

1/4 tsp chili flakes

For Garnish:

2 green onions, sliced

Optional: Sesame seeds or additional chili flakes

Instructions:

Marinate and Cook the Chicken:

In a bowl, combine soy sauce, honey, chili paste, garlic powder, and smoked paprika. Marinate the chicken in this mixture for at least 15 minutes.

Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes on each side, or until caramelized and fully cooked. Let rest for a few minutes, then slice into bite-sized pieces.

Prepare the Creamy Sauce:

In a small bowl, whisk together mayonnaise, chili paste, soy sauce, minced garlic, and lemon juice. Add water to thin the sauce to your desired consistency.

Cook the Noodles:

Cook the ramen noodles according to the package instructions. Drain and toss with sesame oil, soy sauce, garlic powder, and chili flakes.

Assemble the Bowl:

Place the seasoned noodles in a bowl. Add the caramelized chicken on top and drizzle with the creamy chili sauce.

Garnish with sliced green onions, sesame seeds, or additional chili flakes for extra heat.
