Ingredients:
For the Salad:
🥒 Cucumber - 1 (diced)
🍅 Cherry tomatoes - 1 cup (halved)
🧅 Red onion - 1/4 (thinly sliced)
🌿 Fresh parsley - 2 tbsp (chopped)
🫒 Olive oil - 1 tbsp
🍋 Lemon juice - 1 tbsp
🧂 Salt & pepper - to taste
For the Bowl:
🧀 Halloumi cheese - 6 slices
🍳 Boiled eggs - 2 (sliced)
🫓 Crusty bread or pita - 2 pieces
🥄 Hummus - 1/2 cup
🌑 Sesame seeds or nigella seeds - 1 tsp for garnish
Directions:
Prepare the Salad:
In a bowl, combine diced cucumber, cherry tomatoes, red onion, and parsley. Drizzle with olive oil, lemon juice, and season with salt and pepper. Toss to combine.
Cook the Halloumi:
Heat a non-stick skillet over medium heat. Add the halloumi slices and cook for 2-3 minutes per side until golden brown and crispy.
Assemble the Bowl:
Divide the salad into two bowls. Add a portion of hummus, a few slices of crispy halloumi, and the boiled egg slices to each bowl. Place the crusty bread on the side.
Garnish & Serve:
Sprinkle sesame or nigella seeds on the eggs and hummus. Serve immediately and enjoy your Mediterranean feast!
