DELICIOUS GRILLED SALMON & QUINOA SALAD 🥗🐟


Ingredients:  


For the Salmon:  

- 2 salmon fillets  

- 1 tablespoon olive oil  

- 1 teaspoon lemon zest  

- Juice of 1/2 lemon  

- 1 teaspoon garlic powder  

- Salt and pepper, to taste  


For the Salad:  

- 1 cup cooked quinoa  

- 1 cup baby spinach or mixed greens  

- 1/2 cup cherry tomatoes, halved  

- 1/4 cup cucumber, diced  

- 1/4 cup red onion, thinly sliced  

- 1/4 cup feta cheese, crumbled  

- 2 tablespoons chopped fresh parsley  


For the Dressing:  

- 3 tablespoons olive oil  

- Juice of 1 lemon  

- 1 teaspoon Dijon mustard  

- 1 teaspoon honey or maple syrup  

- Salt and pepper, to taste  


Instructions:  


1. Prepare the Salmon:  

   - Preheat your grill or grill pan over medium heat.  


   - Rub salmon fillets with olive oil, lemon zest, juice, garlic powder, salt, and pepper.  


   - Grill the salmon for about 4-5 minutes per side or until cooked to your liking. Remove and set aside to cool slightly.  


2. Make the Dressing:  

   - In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until emulsified.  


3. Assemble the Salad:  

   - In a large bowl, combine cooked quinoa, spinach, cherry tomatoes, cucumber, red onion, feta cheese, and parsley. Toss with the dressing until evenly coated.  


4. Serve:  

   - Plate the salad and top with grilled salmon fillets. Drizzle with any remaining dressing if desired.
