🫒 Olive oil - 1 tbsp
For the Bowl:
🍚 Cooked white or brown rice - 1 cup
🥑 Avocado - 1 (sliced)
🍅 Cherry tomatoes - 1 cup (halved)
🥗 Mixed greens or arugula - 1 cup (optional)
🌱 Chopped cilantro or parsley - 1 tbsp (for garnish)
For the Dressing (Optional):
🍋 Lemon juice - 1 tbsp
🫒 Olive oil - 1 tbsp
🧂 Salt & pepper - to taste
Directions:
Cook the Chicken:
Season the chicken breasts with salt, pepper, paprika, and garlic powder. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5-6 minutes on each side until golden brown and cooked through. Let rest for 5 minutes, then slice into strips.
Prepare the Rice:
If not already cooked, prepare rice according to package instructions. Fluff with a fork and keep warm.
Assemble the Bowl:
Divide the rice between two bowls. Add sliced chicken, avocado, cherry tomatoes, and mixed greens.
Add Dressing:
Drizzle lemon juice and olive oil over the bowls. Sprinkle with salt and pepper to taste.
