Baked Eggs in Avocado
Ingredients:
* 3 avocados, halved and seeded
* 6 large eggs
* Kosher salt and freshly ground black pepper, to taste
* 2 tablespoons chopped fresh chives
Instructions:
1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
2. Scoop out a small amount of flesh from the center of each avocado half to create a larger well for the egg.
3. Place the avocado halves on the prepared baking sheet. You can use aluminum foil to create small nests to keep them steady and prevent tipping.
4. Crack an egg into each avocado half, being careful to keep the yolk intact. Let any excess egg white overflow if necessary.
5. Season each egg-filled avocado with kosher salt and freshly ground black pepper to taste.
6. Place the baking sheet in the oven and bake for 14-17 minutes, or until the egg whites are set but the yolks are still slightly runny. Adjust the time based on your preferred egg doneness.
7. Remove from the oven and let cool slightly. Garnish with chopped fresh chives.
8. Serve immediately and enjoy this nutritious and flavorful breakfast!
