Ingredients:


🥬 Mixed greens (2 cups)

🥑 Avocado (1/2, seeded and peeled)

🍅 Cherry tomatoes (1/2 cup, halved)

🥒 Cucumber (1/2 cup, diced)

🐟 Smoked salmon (2 slices, about 50g)

🧅 Red onion (1/4, thinly sliced)

🫒 Kalamata olives (1/4 cup)

🥚 Scrambled eggs (2 eggs, cooked)

🌿 Hemp seeds (1 teaspoon, for garnish)

🫒 Olive oil (1 tablespoon)

🍋 Lemon juice (1 tablespoon)

🧂 Salt and 🌶️ pepper (to taste)


Instructions:


Prepare the base:


Place mixed greens in a bowl.


Arrange the toppings:

Add diced cucumber, cherry tomatoes, red onion, scrambled eggs, olives, and smoked salmon.


Add avocado:

Place the avocado half in the bowl and sprinkle with hemp seeds.


Dress it up:

Drizzle olive oil and lemon juice over the salad.


Season:

Sprinkle with salt and pepper to taste.
