🥗 Sweet Potato & Stir-Fried Chicken Meal Prep Bowls
Ingredients:
🐓 500g chicken breast, diced
🥕 2 medium sweet potatoes, peeled and cubed
🥒 2 cups green vegetables (zucchini, bell peppers, or snap peas)
🌶️ 1-2 red chilies, chopped (optional for spice)
🧄 3 cloves garlic, minced
🧅 1 small onion, sliced
🫒 2 tablespoons olive oil
🧂 1 teaspoon soy sauce
🥄 1 teaspoon sesame oil (optional)
🍯 1 teaspoon honey
Steps:
Prepare the Sweet Potatoes:
Steam or boil the sweet potatoes until soft.
Set aside.
Cook the Chicken:
Heat 1 tablespoon olive oil in a pan over medium heat.
Add the diced chicken and cook until golden and fully cooked. Remove from the pan and set aside.
Stir-Fry the Vegetables:
In the same pan, add another tablespoon of olive oil. Sauté garlic, onions, and chilies until fragrant.
Add green vegetables and cook for 3-5 minutes until tender but crisp.
Combine and Season:
Return the cooked chicken to the pan. Add soy sauce, sesame oil, and honey.
Toss everything together and cook for 2 minutes to coat.
Assemble the Meal Prep Bowls:
Divide the sweet potatoes and stir-fried chicken with vegetables into meal prep containers.
