Ingredients:
For the Spiced Chickpeas:
1 can (15 oz) chickpeas, rinsed and drained π«

1/2 tsp ground cumin πΏ

For the Quinoa Base:
1 cup quinoa, cooked and fluffed π

1 tbsp lemon juice π

1 cup cherry tomatoes, halved π
1/4 cup kalamata olives, sliced π«

For the Dressing:
3 tbsp olive oil πΏ
1 tbsp red wine vinegar π·
1 clove garlic, minced π§
1 tsp dried oregano πΏ
1/2 tsp dried parsley πΏ
1/4 tsp ground coriander (optional) π

Instructions:
Prepare the Spiced Chickpeas:
Heat olive oil in a skillet over medium heat.
Add chickpeas, smoked paprika, cumin, garlic powder, chili powder (if using), salt, and pepper.
SautΓ© for 5-7 minutes, stirring occasionally, until the chickpeas are crispy and golden. Remove from heat and set aside.
Cook the Quinoa:
Rinse the quinoa thoroughly and cook according to package instructions.
Once cooked, fluff with a fork and mix in olive oil, lemon juice, oregano, salt, and pepper.
Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, parsley, and ground coriander (if using). Adjust salt and pepper to taste.
