🥗 Beef & Veggie Bowl with Avocado
Ingredients:
🥩 Beef strips (150g, marinated and grilled)
🥑 Avocado (1, sliced)
🥦 Broccoli florets (1 cup, steamed)
🌽 Corn (1 cob, cut into sections or kernels removed)
🥕 Carrot (1, diced and steamed)
🫘 Green peas (1/2 cup, steamed)
🎃 Kabocha squash (1 cup, roasted slices)
🍅 Cherry tomatoes (2-3, halved)
🍄 Mushrooms (1/2 cup, sautéed)
🌾 Cooked rice (white, brown, or purple rice, 1 cup)
🌿 Sesame seeds (1 teaspoon for garnish)
Instructions:
Marinate the beef:
Use soy sauce, garlic, sesame oil, and a pinch of brown sugar. Let it sit for 30 minutes, then grill or pan-sear until cooked through.
Prepare the vegetables:
Steam broccoli, carrots, and green peas.
Roast kabocha squash slices in the oven at 200°C (400°F) for 20 minutes, with a drizzle of olive oil.
Sauté mushrooms with a little garlic and olive oil.
Boil or steam corn until tender.
Assemble the bowl:
Start with a base of cooked rice.
Arrange beef, avocado slices, and all the prepared vegetables neatly around the bowl.
Add cherry tomatoes for color.
Garnish:
Sprinkle sesame seeds on top and serve immediately.
