Ingredients:
For the Chicken:
2 chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cumin
Salt and pepper to taste
Juice of 1 lime
For the Fajita Veggies:
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
1 tablespoon olive oil
Salt and pepper to taste
For the Cilantro-Lime Rice:
1 cup cooked white or brown rice
2 tablespoons fresh cilantro, chopped
Juice of 1 lime
Salt to taste
For the Bowl:
1 avocado, diced
Lime wedges (for garnish)
Fresh cilantro (optional)
Instructions:
Marinate the Chicken:
In a bowl, mix olive oil, chili powder, paprika, cumin, salt, pepper, and lime juice. Add the chicken breasts and let them marinate for at least 20 minutes.
Grill the Chicken:
Heat a grill or pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Once done, let it rest for a few minutes, then slice.
Sauté the Fajita Veggies:
In a pan, heat olive oil over medium heat. Add the sliced bell peppers and onions. Season with salt and pepper, and cook until softened and slightly charred, about 5-7 minutes.
Prepare the Cilantro-Lime Rice:
In a bowl, mix the cooked rice with chopped cilantro, lime juice, and a pinch of salt. Set aside.
Assemble the Bowl:
In a bowl, add a portion of cilantro-lime rice, sautéed fajita veggies, and sliced grilled chicken.
Top with diced avocado and garnish with fresh cilantro and lime wedges.
