It’s Taco Tuesday baby! And I feel like that means Fajita
Tuesday too.
You only need ONE pan for this meal,
ingredients:
•chicken breast
•all the juice of 1 lime
•1 TBS olive oil
•1/8 cup taco seasoning
•1 large sweet potato, cut in
chunks – if you haven’t been using sweet potatoes in your Mexican dishes, THIS
IS YOUR SIGN to start!
•1 tsp olive oil
•garlic powder, salt, and pepp
•red, yellow, and orange bell peppers, sliced
•red onion, sliced
•romaine lettuce
•cauliflower rice
•avocado
METHOD:
First, combine your lime juice,
olive oil, and taco seasoning in a bowl. Then put your chicken in and coat it
with the mixture.
Then, coat your sweet potato
chunks in olive oil, garlic powder, salt and pepper.
Spread your chicken, sweet
potatoes, peppers and onion out on a sheet pan.
Bake at 425 for 20-25 minutes.
Assemble your bowl with lettuce, cauliflower rice, avocado, chicken, sweet
potatoes, bell peppers and onion.
Add salsa/dressing/cheese/
whatever you like on top!!
