INGREDIENTS:
1kg stewing beef i used chuck
steak, cut into cubes
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp oregano
3 tbsp olive oil
1 small onion chopped
1 green bell pepper chopped
3 cloves garlic, minced
200g tomato sauce
120ml water
½ cup olive
2 bay leaves
400g potatoes cut into chunk sized pieces
Salt
and black pepper to taste
METHOD:
Dry the pieces with paper towels.
Season the beef with garlic powder, onion powder, oregano, salt and pepper.
Heat the olive oil in a large pot
or Dutch oven to medium heat. Add the beef, onion, peppers. Cook for 5 minutes
to brown the meat.
Add the garlic and cook another minute, until you can smell the garlic in the
air.
Season with salt & pepper to
taste, than add tomato sauce, water, olives, and bay leaves.
Bring to a boil, then reduce the
heat to low and simmer for 40 minutes. Taste and adjust for salt and pepper.
Add the potatoes than bring pot
to a boil, then reduce the heat.
Cover and simmer for another 30
minutes, or until the beef is tender. The liquid should reduce and
concentrate.
Serve with cooked SPEKKO EXTRA
LONG GRAIN WHITE RICE ! cooked according to package directions.
