INGREDIENTS:
1 pound
large or extra large cooked or raw shrimp, peeled and deveined
1 bell
pepper
1 red
bell pepper
1 red and
yellow bell pepper
1 orange
bell pepper, seeds removed and sliced
1 small
yellow onion, sliced
1/2 lime (with juice, optional)
Spices

teaspoons chili powder

teaspoon onion powder

teaspoons paprika or smoked paprika powder

teaspoon cumin
1/2
teaspoon salt

teaspoons dried oregano
1/4 teaspoon ground black pepper
Instructions:
Preheat oven to 425 degrees
Combine all spices in a small mixing bowl. Stir until everything is well mixed.
Wash the boiled shrimp and pull out the tail from each shrimp.
Place the shrimp in a large ziplock bag. Pour fajita seasoning over shrimp in large Ziploc bag. Seal the bag and shake all ingredients together until the shrimp are well coated.
Core the peppers and onions and chop them finely.
Line a large baking sheet with aluminum foil. Spray aluminum foil with nonstick cooking spray. Place the sliced onions and peppers on the prepared baking sheet.
Bake in the preheated oven for 30-35 minutes.
Remove the vegetables from the oven and add the shrimp directly to the sheet pan with the vegetables. Place the shrimp evenly over the vegetables.
If you use cooked shrimp, return the baking sheet to the oven and bake for another 7-10 minutes. If using raw shrimp, increase the cooking time to 15-20 minutes to ensure they are fully cooked.
Remove from oven. Stir gently to combine the spices, vegetables, and shrimp.
Drizzle lime juice over the top, if desired.
Serve with tortillas, over rice, or on its own.
