Ingredients:
2 small ish
sized chicken breasts (or 1 big one. Mine were a pack of 2 and weighed 300g for
2 breasts)
Pepperoni
slices
Tomato
purée
10g grated
mozzarella
30g pizza
mozzarella
Oregano
Garlic salt
Method:
for both chicken breasts:
Slit your
chicken breast through the middle with a knife but be careful not to cut all
the way to the other side!
Add some
tomato purée inside the slit on the bottom and spread with a spoon. Add some
oregano and garlic salt on top of the purée and then add some pepperoni slices
(I used 2 on each breast here)
The cut up
30g of pizza mozzarella lengthways and then cut this in half lengthways to put
on top of your pepperoni in the slit on each chicken breast
Fold the
top of then chicken breast back over and secure with some small wooden sticks
and then pop in the oven for about 20 minutes on 180 degrees
Take your
chicken breasts out of the oven and remove the wooden sticks and set these
aside as you will need them again
On top of
each chicken breast, add some tomato purée and spread it across the breast and
then add 5g of grated mozzarella on top of each breast and some more pepperoni
slices on top (I cut up 2 slices in half and put them on top!)
Secure it
back with the wooden sticks and pop back into the oven until the cheese has
melted and gone crispy.
