• INGREDIENTS :

packets of microwave pilau rice
50g
fresh spinach finaly sliced
2 tbsp
water
1 block
halloumi cheese cut widthways into 6 or 7 slices
2 tbsp
honey
1 tsp
tandoori spice
3 tbsp
Greek yoghurt
1 tsp
sriracha sauce
Salt
and pepper
A small
handful of flaked almonds
METHOD:
-Place
both packets of rice into a microwaveable bowl. Use your hands to ensure all
the grains are separated.
-Stir
in the water, spinach and season with salt and pepper
-cover
the bowl with cling film or place a microwavable plate over the top to trap the
steam in. Set the bowl aside
-Combine
the yoghurt and sriracha together in a small bowl. Season and set aside.
-Heat a
small drizzle of oil in a large non- stick frying pan. When hot place the
halloumi in the pan and fry on a medium heat for 5 minutes, turning reguarly
until browned.
-In the
meantime, microwave the rice on full power for 4-5 minutes covered, or until
the rice has heated the and the spinach has wilted.
-Mix
the honey and tandoori spice together.
-When
the halloumi is cooked, take the pan off the heat. Drizzle the honey and
tandoori spice over the halloumi and allow it to melt for a few seconds.
-Keep
turning the halloumi slices over for a minute or so until they're coated in the
spiced honey on both sides.
-Divide
the rice between two bowls. Top with halloumi slices. Drizzle over some of the
sriracha dressing and sprinkle a few flaked almonds over the top.
