CAULIFLOWER STEAK

FOR THE CAULI STEAK

 

½ head cauliflower, cut into 2 steaks

1 tbsp avocado oil

1 tsp garlic powder

½tsp chipotle powder

½tsp sea salt

Preheat oven to 450°F and line a sheet pan with parchment paper. Place the cauli steaks on the pan, sprinkle with the seasoning on both sides and roast in the oven 15 mins, before flipping and roasting another 10-15 mins or until lightly golden on both sides. Enjoy!

 

FOR THE VEGAN "HONEY" MUSTARD


¼ cup dijon mustard

2½ tbsp agave or maple syrup

1 tsp garlic powder

½ tsp sea salt

Combine all ingredients in a bowl and whisk till smooth. Enjoy!


FOR THE BLACK BEAN PATTIES

 

1½ cups cooked black beans

½ cup walnuts

½ cup rolled oats

1 roasted red bell pepper

¼ cup basil leaves, loosely packed

¼ cup cilantro, loosely packed

1 small jalapeno

1 tbsp lemon juice

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tsp sea salt

2 tbsp avocado oil for cooking

 

METHOD :

 

Combine all ingredients aside aside from the oil in a food processor and pulse a few times. Don't over-process, mixture should be coarse but wet enough to easily hold together.

 

In a skillet heat up the oil. Shape the patties into balls then flatten into rounds and cook. Further flatten out the patties as they cook, but be gentle so as not to break them apart. This will ensure maximum crispiness. Cook until golden and crispy on both sides, 2 mins per side. Enjoy!
