Ingredients:

1 large
piece of roasting beef (+-1.6kgs)

tablespoons oil

1 onion
diced
·
3 cloves
of garlic cut in half
·
2 Imana
beef cubes
·
1.5
litres of water
·
2
tablespoons Worcestershire sauce
·
1
teaspoon onion powder
·
1
teaspoon salt
·
4 sprigs
fresh thyme
·
1/2
teaspoon black pepper powder
·
1
tablespoon all purpose curry paste(wet masala)
·
4 carrots
cut into halves
·
2
tablespoons tomato paste
·
Salt for
seasoning
Method:
Trim
extra fat off beef. In a bowl mix your onion powder,salt,pepper powder and
aminahs masala. Rub meat with this mix.Place instant pot on sauté,add in oil
add in meat and brown on all sides.
Add in
your onions,thyme,garlic. Sauté until softened. Add your water,imana stock
blocks,Worcestershire sauce,salt to season and tomato paste. Mix well,scraping
off any bits from the bottom of the pot.
Add your
meat back into the pot. Cook on manual high pressure for 50 minutes. Once
pressure is released and pot opens add in your carrots and cook on manual high
pressure for a further 15 minutes.
Remove
beef and carrots from the pot and arrange on a platter.
Thicken
up liquid left behind with 3 tablespoons cornstarch with 1/2 cup liquid from
the pot,mix well. Add slurry to the pot. Allow to sauté until liquid has
thickened. Pour gravy over meat, serve with carrots and roast potatoes.
